A wonderful cookie with cake-like texture and a taste of the holidays in every bite!
Pumpkin Cranberry Cookies
Preparation time: 20 minutes
Baking time: 12 minutes
1 batch makes approximately 30 cookies
Ingredients:
1 ½ cups white whole wheat flour
½ cup quick oats
¾ cup brown sugar
½ cup canned pumpkin
4 tbs plain yoghurt
2 tsp vanilla extract
1 stick softened butter or margarine
½ cup dried cranberries
½ cup white chocolate chips
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp allspice
Preparation:
1. Preheat oven to 350
2. Place flour oats and brown sugar in a mixing bowl.
3. Stir in baking powder and baking soda.
4. Add pumpkin, yoghurt, vanilla, butter, cranberries, white chips, and spices.
5. Mix well.
6. Shape tablespoons of dough into cookies and place 1 inch apart on baking tray.
7. Bake at 350 for 12 minutes.
