Serves 4 – 5
INGREDIENTS:
1 lb. ground pork
1 cup chopped onion
1/2 cup chopped green bell pepper
2 medium cloves garlic, minced
1 14.5 oz.can of white beans
1 14.5 oz.can of pinto beans
2 cups chicken broth
1 14.5 oz.can of diced mexican style tomatoes
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper
pinch of salt if needed
PREPARATION:
In a skillet, brown pork and onions, add green pepper and garlic. Cook for a couple more mins. stirring the meat mixture.
Drain beans and rinse them in a colander; combine all ingredients in slow cooker.
Cover and cook on HIGH for 2 hours, turn to med or low for a couple more hours, adding more broth if needed.
