I Want A Ribbon Cutting!
The City of Lake Forest and SCORE will be hosting a free workshop “Start-Up Capital and Financing”. The workshop will be held on October 7, 2010 from 5:30 p.m. – 8:30 p.m. John Seelinger of SCORE will be presenting this workshop. Mr. Seelinger has more than 30 years of banking and commercial trading experience and is the Chairman of SCORE’s banking committee.
This workshop will provide information on topics such as how successful businesses are funded, how a bank looks at your business, how to approach commercial lenders, and if bank loans are the best answer to your company’s start-up needs.

Oktoberfest!
On Saturday, October 9, the Ladera Rancho Chamber of Commerce is hosting its annual Oktoberfest! This is the biggest community-focused event that the Ladera Chamber holds, with several thousand attendees expected.

A Recipe for Success
Morning Muffins:
2 eggs
3/4 cup vegetable oil
1/4 cup milk
2 teaspoons vanilla
1 cup all-purpose flour
1 cup whole wheat flour
1 cup packed brown sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 1/2 cups shredded carrots
1 cup shredded peeled apple
1/2 cup coconut
1/2 cup raisins
3/4 cup sliced almonds
Heat oven to 350° F. Line or grease muffin pan. In a large bowl, beat eggs, oil, milk & vanilla with a whisk until well blended. Add flours, brown sugar, baking soda, cinnamon & salt. Stir gently until dry ingredients are moistened. With a spoon, stir in carrots, apple, coconut, raisins & 1/2 cup of the almonds.
Divide batter evenly among muffin cups, filling 3/4 full. Sprinkle remaining almonds over batter.
Bake 20 to 25 minutes. Cool 5 minutes.
